Chocolate Chip Cookies – no butter, still awesome.

These cookies are made with coconut oil – I’d never baked with it before and had some in the cupboard after buying it on a whim, so when I saw the recipe on Pinterest I started preheating the oven…


1/2 cup softened coconut oil (should have the consistency of soft butter)

1/2 cup caster sugar

1/2 cup light soft brown sugar

1 egg, beaten

1.5 tsp vanilla extract

1 and 1/3 cups plain flour

2 tbsp cornflour

1tsp baking powder

1/4 tsp salt

1 cup milk chocolate chips


  • Cream the oil, sugars and vanilla together until light and fluffy
  • Beat in the egg
  • Stir in the flours, baking powder and salt
  • Mix in the chocolate chips
  • Mould into 18 balls, then flatten slightly on lined baking trays
  • Cover with clingfilm and chill the balls for 1.5-2 hours
  • Bake straight from fridge at 180 degrees for 9-11 minutes until golden brown at the edges.  Allow to cool slightly on the baking trays to firm up before transferring to a cooling rack
